The Cabbage Attack

Ever have left overs with cabbage? I cooked a pork roast on the grill on Sunday. I had grilled the cabbage with it. Yes you can grill cabbage. Send me a request and I will tell you how or read later and I will tell you in one of my upcoming posts. Back to the cabbage attack. I had left over pork roast and left over cabbage. I took them both, added some squash and okra and put them all in the crock pot. I seasoned them with All Season Salt and Pepper. I then put about a 1/2 cup of water in it and let it cook all day on low while I was at work. When I got home last night the smell was not very pleasant but it tasted delicious. Of course everyone know cabbage cooking is not pleasant but the taste is wonderful.

And of Course You Have Leftovers

Last night after several days of cooking on the grill, of course you have leftovers. Well I did not feel much like grilling again, so I decided to just put everything together. Of course we did not have any meat left over so I took all the vegetables put them in the steamer on the stove (not good conservation) then proceeded to see what easy thing I could do to add a little protein to the meal. I looked in the Refrigerator and found sliced roast beef you know the sandwich kind. I though hummm if I take the sliced roast beef put a little butter on a piece of bread top it with the roast beef, put shredded mozarella top that with slice valdalia onions then roast it in the oven, that should make a wonderful meat dish to go with the left over vegetables.

It turned out wonderful and my husband and daughter did not leave any leftovers this time.

Spinach Mushroom Burger

Last night was a good example of conserving energy. My air conditioner was running 100 miles an hour trying to keep the house cooler than 74 degrees. It was a hot 92 degrees. Even though it was hot outside we again decided to grill to help keep the house cool.

My latest is the Spinach Mushroom Burger. I took 2 pounds of greenwise ground chuck, 1 cup of baby portebello mushrooms, dales sauce, salt, pepper, and Italian seasoning. I mixed them in a bowl. I formed 4 large hamburger patties then set them aside to wait on the grill.

I heated up frozen spinach in the microwave. With the rest of the mushrooms I mixed in Dales and butter and heated them for 10 minutes in the microwave.

I used a tomatoe medley consisting of tomatoes, green peppers, onions and celery mixed together in small cubes.

I cooked the patties for 15 minutes on each side and some Texas toast (large pieces of bread).

After they were done I placed the Texas Toast on a plate placed the burger on top of that, added mozerella cheese. I then placed the spinach and tomatoe medley on top of that.

One of the easiest and quickest meals around and tasted delicious.

Cooking outdoors and conserving energy

Last night was a good example of cooking outdoors and conserving energy by using the grill. No we did not use the gas grill we used charcoal, which conserved our gas for the grill.

We prepared Salmon Filets with chili powder, cummin, brown sugar, salt and pepper. Mix all these ingredients together (your tastes are different than mine so mix it to what you like best). Once mixed rub onto salmon filets. Set aside.
Slice some carrots long and slender. Take some fresh snap beans and put them in a steamer along with the carrots. Steam as long as desired tenderness.

Cut a small head of cabbage into wedges. Cut up tomatoes, onions and bell peppers and place them on top of the cabbage wedges on top of aluminum foil. Place these items on the grill over the fire before it dies down.

In about 20 minutes your grill should be ready for the salmon filets. Spray with Pam to keep them from sticking. Place directly on the grill. Filets should be done in about 6 to 8 minutes (make sure to turn them over and grill on both sides 6 to 8 minutes.)

Serve with Orange Slices, snap beans, onions, bell peppers and cabbage wedge.

During the summer light meals are the only way to go

Last night I served a Chef Salad. Took all of 10 minutes to whip up the chef salad from ingredients from the refrigerator. I took sandwich meat including Roast Beef, Ham and Salami and cut 5 pieces each into squares. I then spread them out over the lettuce. I grated cheddar cheese, added 3 boiled eggs cut up, zuchinni cut up and tomatoes fresh off my vine out back.

Add some lite dressing and it will cut down on calories and make for an enjoyable light meal.

Luck of the draw cooking

Alfredo sauce is a favorite of mine. When you mix noodles, chicken, and vegetables. this makes one of the quickest meals you can possibly manage.

My husband got on his mix the bag routine and decided to throw everything in the book in the frying pan and let it simmer. Needless to say it was wonderful. The luck of the draw cooking is always the best.

College daughter at it again. I really need to find her something to do. Last night we had baked catfish. As fresh as it gets. A friend of my husband gave him some catfish straight out of the lake.

Coleslaw, french fries and breaded catfish. Calories? Who cares when it is fish!

Choice Recipes for Summer Break

My choice recipes are getting utilized by my daughter. In for Summer Break from College my daughter has taken over the cooking. She knows what she wants but still has to ask for help on the spices.

Last night she cooked pork chops, corn and green beans. She is determined to get up on a low calorie eating habit and this dinner was all of 43 Fat Calories.

Great daughter I have.

The No Fat Meat

Cooking every evening has become a past time for me. In other words it is in the past. My husband cooked last night because he was tired of eating sandwiches. I am here to tell you he is the best cook I have ever run across.

Every year we have someone give us deer meat. You know the south they have to hunt and feel like they have achieved something. Plus we have an abundance of deer in the South and parks are literally asking men to come out with bows and arrows and take some out so they will not starve to death.

My husband took the deer sausage last night and cook it in a skillet. He then took a box of Hamburger Helper and added it to the meat. You may not know but deer meat does not have fat. Anyway, he added tomatoes and bell peppers.

To tell you the truth that was the best dinner I had had in a very long time.

Not Fast but Good Especially if you Like Pork

Prep Time 5 Minutes
Cook Time 2 hours

This is a good recipe if you have other things to do before sitting down for dinner or on the weekend. It is quick to prepare but takes a while to cook. Believe the wait is well worth it.

Ingredients:
Sazon (8 packets)
Adobo (1/2 cup)
1 Tablespoon Vinegar
1/4 cup minced garlic
1 Pork Roast (your choice)

Mix ingredients together. Consistency should end up being pasty. Place Pork Roast in a roasting pan. Pour ingredients over roast making sure it is packed around the roast tightly. Put in oven and cook 2 hours on 350 degrees for a 5 to 7 lb roast.

This goes nicely with white or brown rice. Comes out deliciously moist.

Recipe from Campbell's Kitchen

Chicken Quesadillas
From: Campbell's Kitchen
Prep/Cook: 20 minutes


Ingredients:

1 can (10 3/4 oz.) Campbell's® Healthy Request® Condensed Cream of Chicken Soup
1 tsp. chili powder
1/2 cup shredded Cheddar cheese
2 cans (4.5 oz. each) Swanson® Premium Chunk Chicken Breast in Water, drained OR 1 can (9.75 oz.) Swanson® Premium Chunk Chicken Breast in Water, drained
8 flour tortillas (8-inch)

Directions:

PREHEAT oven to 425°F.

MIX soup, chili powder, cheese and chicken.

SPREAD about 1/4 cup soup mixture on half of each tortilla to within 1/2" of edge. Moisten edge with water. Fold over and seal. Place on 2 baking sheets.

BAKE 10 min. or until hot. Makes 8 quesadillas

Second Hand Spaghetti Dinner

Last night I went home tired worn out and stressed out. I had nothing ready to cook and I was starving. My neighbor came over and did not leave until 8:30 and by that time I was not in a good mood.

I looked in the freezer we had some hamburger meat, frozen of course. I took it out and knew if I defrosted it in the microwave I would have to fry it to get the taste back.

I defrosted it, I always use freezer bags which is another story, and proceeded to fry it in small chunks in lieu of hamburger patties.

I then proceeded to look in my pantry to try and find something to go with it. To my dismay all I had was some Tomato Soup and a ton of vegetables. I also had some lasagne noodles. An idea popped in my head. I went to the refrigerator and pulled out some salsa that I knew needed to be eaten soon or thrown away.

I mixed the tomato soup and Salsa, added some Dales Sauce, dried minced onions, garlic powder and pepper. In the mean time I had taken the lasagne noodles and broke them into tiny pieces and put them in boiling water.

I then took some bread spread butter on 4 pieces lightly coated it with garlic powder and popped them in the oven on broil.

Wala!!!!!!!!!!! Instant spaghetti dinner. My husband was in awe and it tasted delicious.

Bratwurst Recipe

Here is another mouth watering recipe. This is short and sweet and only takes a few minutes to whip up.

Place Bratwurst into a medium baking pan
Pour 1/2 cup of Worchestshire over them
Place spinach and green beans on top
cover with aluminum foil
bake at 350 for 45 minutes

Quick and easy Stir Fry Chicken

Last night I made a quick Stir Fry Chicken that only took 20 minutes from start to finish. I took pre-cut chicken strips fried them in a teaspoon of oil until no longer pink. Then I added the pre-made stir fry vegetables which included a sauce that was frozen in a separate package but included inside. It turned out great and was a quick dinner so we could see who got kicked off American Idol. Hope you had a nice evening also.

Delicious Pork Roast

This is actually not a quick recipe but for a weekend delight. Fire up your grill. Buy a shoulder pork roast, Dales Sauce and an injector (or as junkies would say a needle for food). You will also need minced garlic (I like the minced garlic in a bottle it has juice that you can pour on the roast)and seasoning salt (should be red).

Pour the Dales Sauce in the injector. Now I am not going to belittle you by saying you have to hold your finger over the hole to keep it from pouring out of the injector. Inject the pork roast as many time as you can until you see it plump and some of the sauce starts seeping out. Mash the minced garlic on the outside being careful not to mash too hard because it will make the dales sauce eject. Then use the seasoning salt over the garlic. I usually coat it until the whole roast is red.

Put the roast in a fire proof pan and put that in the grill. Let it cook for several hours.

People will knock you down to get a taste of this!
